Ceremonial matcha is the highest quality powdered green tea, intended for traditional preparation with a bamboo whisk (chasen). It is made from the youngest leaves of the first spring harvest, providing a gentle sweetness, rich umami flavor, and silky texture.
Our matcha comes from the fertile fields of the Aichi region in Japan. It is grown from the Okumidori cultivar, known for its smooth, balanced character and vibrant emerald green color.
Matcha is a special powdered green tea where you consume the whole leaf, not just the infusion. Therefore, it has a more intense flavor and significantly more nutrients than regular green tea. One cup of ceremonial matcha is nutritionally equivalent to about ten cups of regular green tea.
Ceremonial matcha is higher quality and meant to be consumed on its own, while culinary matcha is intended for cooking and baking. Ceremonial matcha has a more delicate, balanced, and refined taste.
- Sift 1–2 g of matcha into a cup.
- Add 70–100 ml of hot water (around 70–80 °C, not boiling).
- Whisk with a bamboo whisk (chasen) in an "M" or "W" shape until a thick, frothy layer forms.
